Bill McClure’s Cucumber/Tomato Marinade:

1 peeled and thinly sliced cucumber
1 thinly sliced tomato
1/4 of a medium sized onion sliced.
1/4 tsp chili powder to taste
salt and pepper to taste
1/4 tsp garlic powder
1/8 tsp of dry mustard
1/2 teaspoon of sugar
1/4 cup or red wine vinegar
1/4 cup of extra virgin olive oil

Slice your vegetables, put in a bowl, add vinegar and oil then seasoning. Stir and then let marinade in the refrigerator.

Bill McClure’s Pizza Toast

4 slices of white bread toasted evenly
5 slices of Kraft American Cheese
Small amount of diced onion
Dice up some pepperoncinis
Salt and pepper to taste

Toast  four slices of white bread, cool, then; cover evenly with cheese slices. Top with diced tomatoes, onion and pepperoncinis, then salt and pepper to taste and broil in oven until lightly browned.

Bill McClure’s Guacamole and Vegetables for dipping

4 ripe avocados
1/2 of lemon
1/2 lime
Optional: For dipping; a Variety of Cut Bell Peppers or tortilla chips
Salt & pepper to taste

Four avocados chopped and mashed chunky style in a bowl. Squezze the lemon then lime into the avocado mixture. add salt and pepper you are ready to have chips and guacamole or largely cut bell peppers for dipping.
